Fondly known as the Wedding Cake Structure Course

Advanced Diploma in Cake Decorating

Starting from the basics, this course covers all the advanced techniques in cake designing and decorating needed to design your own party cakes and a multi-tiered display wedding cake. Small class numbers ensure personal attention and supervision. Students are required to design and present their work in a cake exhibition organized by the school for 3 (three) consecutive years. Hands on classes will be conducted only for 1 (one) year and on the 2nd and 3rd years, the class will meet three months prior to the exhibition to design and work on their exhibits. New designs, techniques and methods will be taught at these times. 

No prior knowledge in cake decorating is required.

Course Description:
Starting from the basics, this course covers all the advanced techniques in cake designing and decorating needed to design your own party cakes and a multi-tiered display wedding cake. Small class numbers ensure personal attention and supervision. Students are required to design and present their work in a cake exhibition organized by the school for 3 (three) consecutive years. Hands on classes will be conducted only for 1 (one) year and on the 2nd and 3rd years, the class will meet three months prior to the exhibition to design and work on their exhibits. New designs, techniques and methods will be taught at these times. 

Course Content: 
• Preparation of fondant, royal icing & gum paste 
• Covering cakes using rolled fondant and royal icing 
• Making gum paste sugar flowers & leaves (more than 20 flowers) 
• Royal icing piping methods including intricate string work (more than 15 methods) 
• Party cake designing
• Design & assemble wedding cake structures

1st half of Year 1: Theoretical & Practical learning of the essential sugar crafting techniques, covering Sugar Paste & Gum Paste designs, making of Sugar flowers and leaves with their assembling and arranging techniques, Royal Icing techniques and many more. (Regular class attendance is required)

2nd half of Year 1: Students will work on their exhibits for the Largest Sugar Craft Exhibition in Sri Lanka, under close supervision of our Instructors. (Occasional class attendance will be required) - 1st Year Certificate will be awarded

1st half of Year 2: Students are required to work on their own at home or at work and improve on their skills acquired in class and plan for the next exhibition (No class attendance is necessary)

2nd half of Year 2: More new techniques will be taught and the students will work on their exhibits for the Largest Sugar Craft Exhibition in Sri Lanka, under close supervision of our Instructors. (Occasional class attendance will be required) – 2nd Year Certificate will be awarded

1st half of Year 3: Students are required to work on their own at home or at work and improve on their skills they acquired in the past two Years and plan for their final exhibition (No class attendance is necessary)

2nd half of Year 3: More new techniques will be taught and the students will work on their exhibits for the Largest Sugar Craft Exhibition in Sri Lanka, under close supervision of our Instructors. (Occasional class attendance will be required) - Advanced Diploma in Cake Decorating Certificate will be awarded
